Carrot Cake Truffle
A while ago I made oreo truffles. This made me realize that I’m really bad at dipping chocolates. But it didn’t matter, because they tasted great.
And then for Easter I made a mini carrot cake. This made me realize that I’ve watched too many episodes of Ace of Cakes as I tried to cut the mini cakes to be more level as I stacked them. The cake was a little wonky, but again… it tasted great. And it created leftover pieces of cake.
So using Bakerella’s site as inspiration again, I mixed the cake pieces with leftover cream cheese frosting to make my truffle filling. I rolled them into little balls, put them in the freezer to solidify some and then dipped them in white chocolate.
My dipping skills haven’t improved, but these were really good. It’s fun when you get a hit of walnut, or pineapple from the cake in the middle of the truffle.
Now I just need to keep experimenting with flavors and perfecting my dipping skills. I’m thinking I should just try to put them on lollipop sticks for ease in dipping.




Excellent idea! I would much rather have a carrot-cake truffle than a chocolate truffle. Does that make me weird?

No, you’re not weird. Carrot Cake is yummy, so EVERYBODY should want these! I want other cake flavors in truffle form now too!

You could always try the dipping method of putting some chocolate in the palm of your hand, and then rolling the truffle center in your hands. A bit messy, but does the job well! Another good method is to use a fork for dipping, and push the truffle center off the fork with a knife, thus leaving the top smooth. Good luck!
