		<description>Hi! I live in New Zealand and make these truffles with a type of chocolate sandwich biscuit we get here - they&#039;re called Tim Tams. I&#039;ve discovered that the dipping becomes easier if you freeze (or at least chill) the truffles first, since if they&#039;re cold the chocolate sets really quickly. I generally stick a kebab stick in the bottom for dipping to make them perfectly round, but the flaw with that is you get a hole in the bottom. Yours look pretty scrummy, though! :-)
